It is a variety of chicory with an intense dark red colour and white streaks. It has a very crunchy texture and a bitter taste. It is used in so many recipes.

5 - Sopa Coada

This is a typical first course of Treviso cuisine. Its origin is not very clear, but it has been served in taverns for a very long time.
It is a pigeon pie, with a rather dry consistency, in fact it is often served with a cup of boiling broth next to it, to be poured over or eaten separately, according to one's taste.

This recipe, like so many others, has its origins in the peasant tradition and the pigeon was, and still is, a very present bird in this area. It is prepared by alternating layers of pigeon meat with layers of stale white bread and then baked very slowly in the oven. Absolutely must try.
